1 lb. ground beef
1 15 oz. can pinto beans
1 10 oz. can medium enchilada sauce
1 6 oz. can tomato sauce
1 c shredded cheese
1 T minced onion
1 6 oz. package of corn chips
1 c sour cream
1/2 c shredded cheese

Directions:
Directions:
Brown beef, drain off fat. Add beans, sauces, cheese and onions. Set aside 1 c chips, crush the rest and add to casserole. Bake 30 minutes at
375 degrees. Remove from oven and spoon sour cream on top, sprinkle with 1/2 c cheese. Place reserved chips around edges. Bake 2-3 more minutes.

Can be made lower fat by leaving out the 1 c shredded cheese in the casserole and using only the 1/2 c cheese on the top.
