2 lbs. fresh shrimp, headed
3-4 eggs
milk
cracker meal

Wash shrimp, peel, removing shell and legs. Hold each shrimp in your hand and split the top of the shrimp, slicing with knife from the tail to the end, exposing the black vein in the middle. Clean the black vein and stuff out of the shrimp and wash out in clean running water. Keep all cleaned and veined shrimp in a bowl of cool water until all have been cleaned.

Mix eggs and milk in bowl and set aside. Dump 2-3 cups of cracker meal in plastic Zip-loc bag. Dip each shrimp in the egg mixture, then shake in cracker meal coating thoroughly. The shrimp will kind of look like a butterfly. Lay the shrimp on waxed paper, covering each layer with waxed paper.

When oil is hot, carefully drop 6-8 shrimp at a time into oil. Fry for about 1 minute, stirring. Remove when golden brown. Drain fried shrimp on paper towel. Serve while hot.

Nothing is as good as home fried shrimp, but I can't lie to you girls...... it's much easier to eat out than prepare them at home.
