1 large can yams, drained
1 c. sugar
1/2 stick melted margarine
1/2 c. evaporated milk (cream)
2 eggs
1 tsp vanilla

Topping:
1 c.coconut
1 c. brown sugar
1/2 c. melted margarine
1/2 c. flour
Directions:
Directions:
Preheat oven to 350º. Prepare topping by adding all ingredients together. Set aside.

Combine all other ingredients into large mixing bowl. Mash yams with fork, then beat with mixer until smooth.

Spread in 9x13 glass baking pan. I always cook this without topping for about 15 minutes, then add topping and cook until topping is browned and mixture is bubbling.

For special occasions, such as Thanksgiving or Christmas, I usually double this recipe. Always make sure to prepare in your larger pan or split into two 9x13 pans, if you want.
