2 packages fresh squash (washed and cut into thin slices
1 large onion, chopped
1 16 oz. container sour cream
2 cans Cream of Celery soup
16 oz. shredded cheddar cheese
1 lb. bacon
1 c. croutons, crushed

Directions:
Directions:
Preheat oven to 350º. Dice bacon and combine with chopped onion, cooking until bacon is done and onion is transparent. Remove from pan and drain. Then, place squash in same pan adding enough water to just cover squash. Simmer until squash is tender, but not mushy. You may have to add water during this process so squash will not scorch. When cooked, drain excess water and add dump in large mixing bowl. Add bacon, onion, sour cream and soup and mix thoroughly. Once mixed, add 1/2 of the cheese and spread evenly in 9x13 baking pan. Bake in oven until mixture begins to bubble, Remove from oven and add a light sprinkle of crushed croutons and the remaining cheese. Return to oven until cheese melts.
