2-3 lbs turtle meat
1 tsp baking soda
1 to 1 1/2 lbs stew beef
1 head cabbage
1 bunch celery
2 bunches carrots
3 large onions
salt and pepper to taste
1 qt tomato juice
1/2 cup cooking wine
dash of Tabasco sauce
pickling spice

Directions:
Directions:
Put turtle meat in large pan. Cover with water and add 1/2 tsp baking soda. Boil for a few minutes, and skim froth from the top. Rinse with clear water and repeat process. Rinse again.

Put turtle in large kettle with stew beef. Beef bone may be used, as well. Cook until meat is tender, then grind.

While meat is cooking, coarsely chop cabbage, celery, carrots, and onions. Combine vegetables and meat in large kettle. Cover with water. Add tomato juice, wine, and Tabasco sauce. Salt and pepper to taste. Simmer for 2-3 hours. Drop in a small bag of pickling spice the last half hour of cooking time, then remove and discard. More water may be added, if desired.
