8 tablespoon olive oil
4 cloves garlic, chopped
3 green onions, chopped
1-28 ounce can crushed tomatoes
2 teaspoons dried oregano
1/2 cup chopped fresh basil
1/4 teaspoon dried crushed red pepper
3/4 cup breadcrumbs
3/4 cup grated Parmesan cheese
1/2 cup flour
2 large eggs, beaten
9 boneless chicken thighs
3/4 cup grated mozzarella cheese

Heat 4 tablespoon olive oil. Add garlic and onions. Saute until tender. Add tomatoes, oregano, crushed red pepper. Simmer until sauce thickens. Mix in basil and season to taste with salt and pepper. Set aside. Blend breadcrumbs and Parmesan cheese. place flour and eggs in separate bowls. Coat chicken with flour, then eggs, then breadcrumbs. Heat remaining oil in skillet over medium heat. Add chicken and saute until golden brown and cooked through. Place chicken pieces in 9 x 13 dish. Spoon sauce over chicken pieces. Sprinkle with mozzarella cheese. Bake at 350º for 30 minutes or until juices run clear.
