"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
Large bag of large marshmallows
1 cup margarine
4 eggs
1 2/3 cup flour
6 Tbsp cocoa
2 cups sugar
2 cups chopped pecans
2 tsp vanilla
1/8 tsp salt

Directions:
Directions:
Melt margarine with cocoa over low heat. Cool. Beat eggs and sugar. Add cocoa mix. Stir in flour, salt, nuts, and vanilla. Put in waxed paper lined sheet cake pan. Bake for 30 minutes in 350 degree oven. It is done when toothpick inserted in center comes out clean.

While cake is baking, cut marshmallows in half crosswise. (enough to completely cover bottom of cake)

When cake is done, turn out immediately on board. Remove waxed paper and put marshmallows, cut side down all over cake. Do as quickly possible. Press down on marshmallows, gently, so they will fuse together. Set aside to cool.

Cover with the following frosting:
1 lb powdered sugar
¼ cup margarine
evaporated milk as needed
6 Tbsp cocoa
1 tsp vanilla

Mix to desired consistency and spread over marshmallows and sides of cake. Allow to dry and cut into 1 ½ inch squares.

Personal Notes:
Personal Notes:
This is an all time favorite for my family. Even when it means I have to start off by making the marshmallows, since we usually can’t buy them in Zimbabwe.
