1 Large peeled and shredded zucchini
4 eggs, beaten
1 small onion or handful dried onion flakes
3 Tbsp butter
brick cheese
1 cello Ritz Crackers, crumbled
1 Tbsp all season salt
salt & pepper to taste

Directions:
Directions:
In a large fry pan, melt butter. Add zucchini and onion. Saute until almost tender (clear). Add season salt. Stir together. Pour in beaten eggs. Top with crackers then cheese. Do not stir again. Reduce heat to low and cover. Cook for 20-35 minutes or until egg is set. Cut in pie shape and serve immediately. Salt & pepper to taste.
