1/4 C freshly squeezed lime juice
2 tsp. kosher salt
10 fresh corn tortillas, cut in quarters
2 Quarts Peanut Oil

Directions:
Directions:
In a small mixing bowl, combine the lime juice and salt.One at a time dip the chips into the lime juice and arrange on a cooling rack to dry. Allow to dry at least one hour or until no moisture is visible.
Place the oil in Dutch oven or deep fryer and heat to 375º. Gently lower chips 5 or 6 at a time for 20 to 30 seconds. Using a slotted spoon remove chips and drain on paper towel lined sheet pan. Allow to cool before serving. Very easy to increase recipe with more lime juice and tortillas.

***Peanut Oil is excellent for frying. Does not catch on fire at high temps.
