5 lbs. Idaho potatoes
2 C sour cream
1/2 C chopped chives
1 stick butter
2 C shredded sharp Cheddar Cheese
salt & pepper to taste
2 add'l C shredded sharp Cheddar Cheese

Directions:
Directions:
Scrub potatoes and place in 9 x 13 pan. Cover with foil and bake 1 hour or till fork tender.
Remove from pan and let cool so you can peel them.
Mash well and add the sour cream, chives, butter, shredded cheese, salt & pepper.
Put in a 9 x 13 pan and cover with add'l shredded cheese.
Bake 350º for 1 hour.
