1 lb unsalted butter, softened
1 1/2 cup sugar
3 cups all purpose flour
1 cup sesame seed
2 cups shredded coconut
1/2 cup finely chopped almonds
pinch of salt

Directions:
Directions:
Cream butter, add sugar, and beat until fluffy. Add flour and mix until combined. Stir in sesame seeds, coconut and almonds. Divide dough into thirds, place on waxed paper, and form into rolls (approximately 2" diameter). Chill in refrigerator.

When firm, slice into 1/4" slices and bake in 300º oven. Bake on un-greased cookie sheets for 30 min or until golden. Time may vary so keep watch. Cool on Wire rack. Makes 4 dozen.

These are the best shortbread cookies I've ever had. Every holiday season, I get requests for these from family and friends. Hope you enjoy them too. This recipe came from my maternal grandmother.
