For the salad:
1 6-oz pkg Uncle Ben's Orig.Long Grain & Wild Rice
2 1/3 cups water
2 cups cut-up cooked turkey
1/4 lb. fresh mushrooms, sliced
1 cup fresh spinach leaves, cut into strips
1 green pepper chopped
1 bunch green onions, with tops, sliced
chopped fresh Italian parsley
toasted slivered almonds
cherry tomatoes, halved

For the dressing:
1/3 cup dry white wine
1/4 cup olive oil
2 tsp sugar
3/4 tsp salt
1/4 tsp pepper

Directions:
Directions:
Combine water and contents of rice and seasoning packets in medium saucepan. Bring to boil, then cover, lower heat and simmer until all liquid is absorbed - about 25 minutes. Transfer to large bowl and chill.

Add turkey, mushrooms, spinach, green pepper, green onions and parsley to the chilled rice.

Blend wine, oil, sugar, salt & pepper. Add to rice mixture. Toss. Top with toasted almonds and halved cherry tomatoes. Serves 6.

My variation - is that I dump the hot cooked rice over the spinach and then add all the other ingredients and serve the salad warm. It's also great cold when it's leftover. This recipe is from the side of a box of Uncle Ben's Long Grain and Wild Rice. Enjoy!
