2 onions, quartered
3 T brown sugar
1/2 T smoked paprika
3 T standard steak dry rub
1 t ground black pepper
1 (4-6 lb) pork butt
1 T liquid smoke/ or better yet use a smoker!
3 t salt (sea salt if possible)
1/2 tablespoon ground oregano


Sauce

1 c cider vinegar
1/4 c worcestershire sauce
2 t sugar
½ t dry mustard
¼ t cayenne pepper
½ t garlic powder
1 ½ t crushed red pepper flakes

STEP 1~season/trim some of the fat off.
Best if seasoning is done the night before. Season pork with salt, pepper, paprika, steak rub and brown sugar. Refrigerate overnight in plastic bag.


STEP 2~Combine vinegar, Worcestershire sauce, red pepper flakes, sugar, mustard, garlic and cayenne pepper. Mix well. Add approximately 1/4 of mixture over roast pre cooked. Cover and refrigerate remaining mixture.


STEP 3~Add pork to slow cooker/crockpot and 1/4 of sauce. Quarter onions and place on top of meat in crock pot. Slow cook on LOW for approximately 7-10 hours. Obviously the longer the better. Every 2-3 hours, drain some of the liquid into a bowl and place aside (This will prevent your pork from becoming too soggy) Also add a little liquid smoke!!

STEP 4~at 7-10th hour, remove pork and place in a large bowl and discard of onions. Pull pork with forks to desired texture. Add back remaining liquid from crock pot and some of your stored refrigerated sauce as well. Remaining sauce can be combined and served hot on the side.

STEP 5~ Serve hot as platters or sandwiches! Complementary sides of choice: cole slaw, baked beans!

Serves 6-8. Preparation time 25 minutes the day before serving and 7-10 hours of slow cooker.
