1 large artichoke
pinch of sugar
pinch of salt
squeeze of lemon juice
2 cardamom pods
Plenty of Parmesan cheese (freshly grated)
Fresh tomato sauce (recipe in Sauces Section)

Directions:
Directions:
In a large pot of water, boil artichoke with remaining ingredients for about 40 minutes or until leaves peel away easily. Allow to cool.
Assembly:
Separate leaves. Discard hairy part in center.
Cut choke into 6 segments.
Arrange artichoke leaves in circular pattern on large ovenproof plate. Place choke segments in center.
Spoon over tomato sauce making sure there is some on each leaf.
Sprinkle liberally with grated Parmesan.
Place in hot oven (425º) for 10-15 minutes until cheese is melted and very lightly browned.
Serve with crusty bread to mop up sauce. Serves 4. Preparation time 1 1/2 hours
