1 1/2 lbs Red Bliss potatoes
2 tablespoons olive oil
1 teaspoon whole cumin
2 teaspoons freshly ground coriander seeds
1 teaspoon mango powder
1/2 (or to taste) teaspoon red chili powder
2 Tablespoons washed and chopped cilantro
salt to taste

Wash and scrub potatoes. Place in a saute pan with oil, salt and one cup of water. Once it is heated, cover and cook for 10 minutes or until you can insert a toothpick and the potatoes are done. You can add more water if the potatoes are still raw. Once they are done, open the lid, increase the heat and add the cumin and all dry spices and mix well. Lower the heat and let the spices cook for 5-8 minutes. Than add the cilantro, mix well. Remove from heat after 2 minutes. Eat hot or cold. Makes 3-4 servings. Preparation time 25 minutes.
