"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
1 package cubed steak (you can buy it already cubed - usually comes in packages of 4-5 pieces)
flour
salt and pepper
garlic salt or powder
1 large onion (optional)
vegetable oil

Gravy:
2 tbsp Cornstarch
2 c. water
dash of Kitchen Bouquet

Directions:
Directions:
If frozen, thaw meat and roll in flour, being sure to coat both sides evenly. Season with salt, pepper and garlic salt. Prepare frying pan by adding enough oil to cover meat while cooking. Don't let it get too hot, just around medium heat.

Carefully place pieces of meat in oil. It will sizzle it it's hot enough. Fry until brown on one side and then turn and repeat on other side. Try not to over cook.

If you like, you can add your sliced onion when you turn your meat for the last time. Allow the onion to brown and remove to be served as a side with your meat.

Optional: To prepare gravy, follow these steps. Once meat is cooked, remove from oil, drain most of the remaining oil, just leaving a small amount in pan. Mix 2 tbsp cornstarch in 2 c. warm water. Mix well. Slowly pour into pan with remaining oil and crumbs from meat. Add salt and pepper and stir constantly until thickened. You can also add a drop or two of Kitchen Bouquet to brown.

Return meat to gravy and allow to simmer on low. Keep an eye on it so it doesn't get too thick. You can add a little bit of water and stir to prevent this.
