2 lbs. frozen California Style vegetables
3 cans low fat chicken or vegetable broth
1 can Mild Rotel tomatoes
1 onion, chopped
10 oz. 2 % Velveeta cheese

Directions:
Directions:
Mix vegetables, broth, tomatoes and onions in pot and bring to a boil. Turn heat down and simmer for approximately 1 hour. When vegetables are tender, mash them with potato masher, cut cheese into small chunks and add to vegetables, stirring until melted.
