2 cups seeded raisins
2 cups boiling water
1/2 cup sugar
2 tbsp. flour
1/2 cup chopped nuts
2 tsp. grated lemon rind
3 tbsp. lemon juice

Directions:
Directions:
Cooked covered until tender (about 5 min.) the
raisins in the boiling water. Stir in mixture of
sugar and flour. Cook over low heat, stirring
constantly, until boiling. Boil 1 min. Removed
from heat and stir in the nuts, lemon rind and
lemon juice. Cover with top crust. Bake until
nicely browned. 425' (hot oven) for about 30 to
40 min.

I do not use the grated lemon rind or nuts, but I do use the lemon
juice. This is a two crust pie. Raisin pie is know to the
Pennsylvania Dutch as the "Funeral Pie" .
